Steam Jacketed Vat

Steam-jacketed kettles (Figures 1 and 2) are often used to rapidly and uniformly heat food and agricultural products to processing temperatures. Steam is injected into a thin jacket that surrounds the bowl of the kettle (Figure 3).In chemical engineering, a steam jacketed vessel is a container that is designed for controlling temperature of its contents, by way of the use of a cooling or heating "jacket" round the vessel via which a cooling or heating fluid is circulated.
