From the washers, the apples are chopped up by a grinder, apple mill, or hammer mill and turned into apple mash. The primary enzymes used in apple juice production are pectinases. A blend of pectin methylesterase and endo-polygalacturonase can increase juice yield during the maceration process.There are two main types of apple juicers: centrifugal and masticating. The difference is in how they get juice from an apple. Centrifugal apple juicers extract liquid by chopping up apples at high speed. Masticating apple juicers grind and press the apple to release the juice.Apples are harvested, cleaned, and crushed in a mill or macerated. The pulp is pressed and treated by enzymatic and centrifugal clarification to remove starch and pectin. These processes result in natural, fresh juice.
