These grades are based on characteristics such as test weight and include limits on damaged kernels, foreign material, shrunken and broken kernels, and wheat of contrasting classes. Each determination is made on the basis of the grain free of dockage.Grades relate to a grain's end-use quality, meaning grades relate to how grain characteristics affect performance during processing (e.g. how much flour is produced during milling) or the quality of the end product (e.g. texture of cooked pasta).
