Grease Trap

A grease trap (also known as grease interceptor, grease recovery device, grease capsule and grease converter) is a plumbing device (a type of trap) designed to intercept most greases and solids before they enter a wastewater disposal system.Hydromechanical grease interceptors (HGIs) (formerly named grease traps) treat kitchen wastewater from food service establishments (FSEs) using gravity separation aided by vented flow control. They are typically installed indoors and connected to one to four sinks in the kitchen and can be either above floor or below.
