In 1904 Frank Epperson was 11 years old when he invented the ice lolly. One cold winter he accidentally left soda water out in the snow. Epperson was shocked that the soda had frozen and so, like all curious children, he decided to taste it.Ice-cream makers are household appliances that turn a basic liquid base or custard – a mixture of cream, milk, egg yolks and sugar, plus any flavourings – into frozen ice cream through a process of chilling and churning. A rotating paddle keeps the liquid moving and lets in air, while also scraping down the sides.Soft serve machines work by taking a liquid ice cream mix and simultaneously agitating it as well as freezing it. Depending on the machine and the type of mix, the time it takes to finish converting a liquid mix to soft serve ice cream ranges from 15-30 minutes.The liquid base mix (either the reconstituted powder or per-mix) is added to the holding compartment of a soft serve freezer. While the mixture is freezing, air is simultaneously being beaten into it. The process of whipping the ice cream mix as it is freezing creates smaller ice crystals, meaning softer ice cream.Soft serve, also known as soft ice, is a frozen dessert, similar to ice cream but softer and less dense due to air being introduced during freezing. Soft serve has been sold commercially since the late 1930 s in the US.
