For those who don't know, idli is a steamed cake made with a rice and lentil fermented batter. The same batter is also used to make a crepe called dosa which is often filled with spicy potato filling among many other things. For us, eating South Indian food was mostly restricted to restaurants.Idli batters have more urad dal compared to dosa batter. The urad dal in the idli batter gives the lift and the sponginess. Dosa batters have more rice content. The rice in the dosa batter gives you the crispy texture and deliciousness.
