This heating stage is then followed by a rapid cooling stage. The pasteurization temperature and time depend on the product.The general objective of pasteurization is to extend product shelf-life by inactivating all non-spore-forming pathogenic bacteria and the majority of vegetative spoilage microorganisms, as well as inhibiting or stopping microbial and enzyme activity.A pasteurization unit (PU) is a measure of the heat received by a beer during pasteurization; 1 PU is 1 min at 60° C (140° F) or the equivalent time-temperature effect on microorganisms. Beer is frequently given 10-100 PU, although 5 PU is sufficient in most cases.
