Nisin is a polypeptide antibiotic peptide that is used as a food preservative and has potential applications in oral health and biomedical fields: Food preservative Nisin is a bacteriocin, a protein or peptide produced by bacteria to inhibit the growth of other bacteria. It is used in canned foods to prevent spoilage by thermophilic sporeformers and acid-tolerant spoilage flora. Nisin is approved by the FDA and the European Food Safety Authority (EFSA). Oral health Nisin has antimicrobial properties against bacteria that cause oral diseases like caries and periodontal disease. Nisin-containing dental materials and nisin-producing probiotics are being studied as potential treatments for oral diseases. Biomedical applications Nisin may be a potential therapeutic for treating head and neck squamous cell carcinoma (HNSCC). It induces apoptosis, cell cycle arrest, and reduces cell proliferation in HNSCC cells. Nisin was discovered in 1928 by Rogers and Whittier, who noted that certain lactic streptococci inhibited starter cheese cultures.
