Red chillies are one of the most important spices used globally, particularly in Indian, Mexican, Thai, and Chinese cuisines. After harvesting, fresh red chillies contain a high moisture content (60–80%), which makes them perishable and prone to spoilage due to microbial activity. Drying red chillies is essential to preserve them, enhance shelf life, and prepare them for further processing like grinding into chilli powder. Traditionally, sun drying is used, but it is weather-dependent and can lead to contamination and uneven drying. Modern red chilli dryers offer a hygienic, efficient, and faster alternative.
