Vacuum packaging involves removal of air from within the pack and maintaining an oxygen-deficient environment around the product by sealing the product in a flexible film of low oxygen permeability.A vacuum sealer is a machine that removes the air from either a plastic bag or another storage container, and then seals the container to prevent any air from coming in. Vacuum sealing keeps food fresh by removing the oxygen, which bacteria and mold need to grow.The basic working parts of a vacuum packing machine are a hermetically sealed chamber from which all air is removed, a pump which uses rotating blades to remove the air and thermal strips which are used to seal a vacuum pouch within the machine.
